Ingredients and Preparation :

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes and then drain.

Remove half of the onions and set them aside for garnishing.

3. In the same pan, add the ginger-garlic paste and sauté for a minute until fragrant. Then, add the chopped tomatoes and cook until they turn soft and pulpy.

4. Add the chicken pieces to the pan and cook until they are lightly browned on all sides. Stir in the biryani masala, turmeric powder, red chili powder, and salt. Mix well to coat the chicken with the spices. 

5. Reduce the heat to low and add the plain yogurt to the pan. Mix gently to combine the yogurt with the chicken and spices. Cover the pan and simmer for 15-20 minutes until the chicken is cooked through and tender.

6. While the chicken is cooking, bring 4 cups of water to a boil in a separate pot. Add the soaked and drained rice, along with a pinch of saffron strands and salt. Cook the rice until it is 70% cooked. Drain the partially cooked rice and set it aside.

7. In a large, deep oven-safe dish, layer the partially cooked rice and the cooked chicken curry. Sprinkle a handful of mint leaves and the reserved sautéed onions over the top.

8. Preheat the oven to 180°C (350°F). Cover the dish tightly with aluminum foil and bake for 30-35 minutes, allowing the flavors to meld together and the rice to cook completely.

9. Once done, remove the dish from the oven and let it sit for a few minutes. Fluff the rice gently with a fork, mixing it with the chicken curry.
